The story behind the carved pumpkin cake
I love cake carving – and I often get asked how I got started! Well my VERY first time carving a cake was this carved pumpkin cake 9 years ago – yup back when I didn’t have a good camera and took all my pictures at night in my florescent lit kitchen. ANYWAY – ever since I’ve been carving a pumpkin cake every fall – and this year I’ve made a video tutorial for you!
My cakes look different EVERY year! I never make it the same – one year I even make a Mickey Jack-O-lantern cake. That was a fun one. ANYWAY a realistic looking pumpkin means they are all unique. Sometimes they are taller, sometimes short and squatty, the best part about recreating something from nature is that it CAN be different and still look great!
This was not only my first carved cake back in the day, but also my first time airbrushing – it’s such a fun toy to have BUT you can also leave your pumpkin plain (like Mickey) and it will still look awesome and impress everyone! The biggest thing I can say is to just have fun! Because you don’t have to worry about it being perfect (in nature everything has natural flaws) it’s a really fun one to experiment with!

Above is last years cake – you can see I didn’t carve into the top very much and I used chocolate fondant for a more dead looking stem! the possibilities are endless – just HAVE FUN! and take pictures and tag me in social media! I WANNA SEE how amazing you do!
Tips to carve the Perfect realistic pumpkin cake
- Make sure your cake is partially frozen
- Be sure your knife is sharp and strong
- You can always cut more, not less. Measure twice, cut once.
- If you don’t want to airbrush, you can use orange and brown luster dusts and brush that into the cracks. But be sure your cake is perfectly dry first.

Question for you. After you crave everything do you put it back into freezer before the ganache? I started gamaching right after craving and I started getting a lot of crumb.

nope, you want it to be thawed before frosting or covering with fondant. try doing a crumb coat first, a thin layer, once it sets you can add another thin layer of ganache. It might also be the cake your using, some are more “crumby” than others.
