I adore soups.  Warm, comforting, filling and oh so delicious.  I mean seriously veggies, meats, dairy – everything in one dish – the perfect bite.  AND even better soups are so easy to make! I make soup probably once a week, so I have a ton of soup recipes to change things up often.

So when we decided to celebrate National Soup Month I knew just which soup to share – my one pot Loaded Baked Potato soup! I mean who doesn’t loved  loaded baked potato and in soup form? YUM! I’m just a little obsessed with this one!

But let’s face it – anything made with bacon and bacon grease is bound to be good, right? after you cook the bacon you cook the potatoes and the onions in the grease left – YUM! Seriously so good! Then you not only stir in more onions, sour cream, cheese and of course bacon but you can also top each bowl with more to personalize it!

One Pot Loaded Baked Potato Soup Recipe

This loaded baked potato soup recipe is so easy to make and it's all in one pot for easy clean up - it's rich, filling and tastes amazing - the perfect comfort food

Ingredients

  • 8 slices of thick cut bacon
  • 1 small onion
  • 2 cloves garlic
  • 5-6 large potatoes - peeled and diced
  • 2 C Chicken Broth
  • 3/4 C butter
  • 3/4 C all-purpose flour
  • 1 C heavy whipping cream
  • 5 C whole milk
  • 1-2 tsp salt
  • 1/2 tsp pepper
  • 2 C shredded cheddar cheese
  • 1 bunch green onions
  • 1/2 C full fat sour cream
US Customary - Metric

Instructions

  • in a large pot cook the bacon - when it's done pull it out, and cut into strips
  • Add the butter to the pot with the bacon grease and melt it
  • add the onion, garlic and potatoes and cook slightly
  • add the flour, salt and pepper and stir - cooking the flour slightly
  • add the chicken broth, milk and cream and bring to a boil
  • turn the heat down and simmer until the potatoes are cooked through
  • add the cheese and stir
  • add the sour cream, the bacon and the green onions and stir
  • serve with more cheese, bacon and green onions

    Made this for a church soup cook off and took first place! I drained most of the bacon grease off, added just 1/2 stick of butter and used 1/2 cup of flour. Added celery and grated, chopped carrots. Six cups of 2% milk (no cream), and greek yogurt in place of sour cream. It was fantastic! Thanks for the recipe!

    I randomly chose this recipe tonight from a ton of baked potato soup recipes (it was delicious) and when I went to save it to Pinterest, I realized we were eating it while watching a rerun of Halloween Baking Championship with you on it. Anyway, the recipe was great, and that was exceptionally weird.

      how totally fun!!!! it’s crazy that I’m on TV a lot more now than the year it aired (replays play a lot more than the current episodes) so I’ve caught it a few times too! so glad you enjoyed the soup too!

      GAH I struggle answering this question since I have no sense of serving size. I believe a correct serving size is like 1/2 C soup – which is ridiculous… It’s a 6 quart pot – and it’s full, I fed my family of six 1 1/2 times with this we all have it the first time and a few of us enjoy leftovers (I have teenagers, it used to be 2 full nights)

      you’d have to change a lot of the recipe to create a crockpot version – I’ve had crockpot soups with potatoes and they’ve been just fine, but only soups made specifically for a crockpot. And I’m sorry to say I’m not much of a crockpot gal so I wouldn’t really know where to start changing things up.

    I made this a few weeks ago for my whole family, I doubled the batch and used Panchetta in place of bacon in the soup and it was a huge hit! Making it again this weekend!!

    I decided to make this recipe tonight for the loaded potato soup instead of the one I usually use. I have to say, it was a fantastic recipe and my house loved it! I served it with grilled cheese and bacon panini’s that I made fresh as well and dinner turned out awesome! Suggestion, I added some of Tony’s Creole seasoning to the soup, about 1 1/2 tsp, and it really gave the soup a fantastic flavor! This was a great recipe! Will definitely be making it again in the future! I love potato soup with heavy cream! It makes it!

    Ashlee, I just finished making this recipe for tonight’s dinner, and had to try a small amount since it was done around lunch time. Oh my word, it’s delicious!! I can’t eait for my family to try it. I have a potato soup recipe I usually use, but this just replaced it! There is a restaurant I love to get loaded baked potato soup from when they have it…this just replaced that as well. So good!! I made the recipe exactly how you have it, but I noticed one of the reviewers mentioned cutting back on the butter and draining the bacon grease, have you tried making a reduced fat version?
    Thanks for an amazing recipe, it’s definitely being added to my recipes and into my fall/ winter meal rotation.

      YAY!!! I’m so very glad you are happy with it! But I personally have no interest in reduced fat anything. reduced fat not only lowers the flavor but it also makes it less filling so people tend to simply eat more of something with less flavor. I’d rather eat less with more flavor!!! but of course the best part about making your own food is you can change it up to fit your own preferences!

    I need to take to work. Is it best to make day. before and just rewarm in crockpot or does it taste leftover.?

      refrigerators dry out food so when you reheat you’ll just need to add a little extra milk! I’d also consider cooking the potatoes a little aldente originally so the heating/refrigerating and reheating own’t make them overly mushy

    This is out standing! I didn’t have sour cream and I was a cup shy of milk so I added 2 cups cream and 4 cups milk and no sour cream, and it was still thick and tasty, and sure fixed my craving for a good potato soup.

    Wow! When your 15 yr old grandson asks that you make this EVERY Sunday, then you know it’s great! My spouse says this is a definite keeper. Simple to make but rich and creamy as well! Wonderful on cold winter North Carolina days; I serve it with fresh yeast rolls and a tossed green salad. Thanks so much!

    Do you use sharp cheddar? How many does this feed ? And can you double recipe if feeding a lot or just make more pots?

      you can totally double it but you’ll need a super large pot or two for sure. And I have used both mild and sharp cheddars – totally depends what you like!

I just wanted to say that I read the comments and you are my spirit animal….saying 1/2 cup serving size is ridiculous and you aren’t interested in low fat anything 😂 You are me 💖

    I was sick one weekend and the only thing that sounded good was a creamy soup! So I trudged to the store and got the ingredients for this soup verbatim and took them home to put together. This soup is DELICIOUS! Followed it to a T and only adjusted the pepper! I used to buy the premade soup from the supermarket for 6$ a pint, and after finding this amazing, easy, and truly one-pot soup is as money saving as it is tasty, giving a huge amount of left overs to keep on hand when I get another craving for bacony cheesy gooey soup. Thanks so much for posting, as this is now a household staple (:

    Delicious-Added a few drops of liquid smoke which worked really well with the cheese and bacon. Also wondering if you could use fried – smoked halloumi and do a veggie version?

    Just made this recipe and love it! Most definitely my favorite potato soup recipe thus far. Only difference I did was add cheddar, Colby Jack and velveeta cheese since I was low on the cheddar cheese amount. And on a side note I never leave a comment. 😊

    The flavor of this soup was great after I added onion and garlic powder! I cut the recipe in half and when I make it again, I would switch the milk and broth amounts, omit the cream, and decrease the flour. I found the consistency way too thick. Very tasty though!

    This was my 1st time making this soup, it turned out so good ! Really flavorful ! The only things i changed was to add more seasonings, some Himalayin Pink Salt, and I didnt have any heavy cream so I made my own ( thankyou Pinterest !) by mixing 3/4 cup of milk with a 1/4 cup melted butter. This recipe is a keeper !

    Ive made this twice in the last few weeks, my grown son said it was the best soup he’d ever had, and I have to agree ! Really good ! I used real cream the 1st time, but was out the 2nd time so used” homemade cream substitute ” ( milk and melted butter per Pinterest) but the soup with the real cream was the best !! 5 stars !!! Thanks for the great recipe!!

    Ive made this soup 3 x in the last 2 months, my son said it was the best soup he’d ever had. It may not be low cal or low fat, but its totally worth the calories. So rich and creamy ! Thanks for the recipe !

      dairy based food doesn’t freeze well, it will be safe to eat but it will change the texture

      I just add it to the pot with some extra milk to adjust for how the fridge dries out food. and heat over the stove

    Hello, I was thinking of making this tonight for dinner and was wondering if i could Garlic powder? As i dont have any garlic here. Also i dont have heavy cream can i use more milk? Anyways its looks amazing and i cant wait to try it!!!! Thank you for your time!!!

      It will struggle to get to the right thickness with just milk. And I’m personally not a fan of garlic powder, I feel like it has a weird aftertaste vs fresh garlic. BUT that said using it won’t hurt the recipe at all.

    I saw on another comment that this feeds your family of 6. Would I be able to freeze some of this in freezer safe bags? We are a family of 3, and we both work 50+ hours a week, so anything that I can make a lot of and freeze for a day when No one wants to cook is perfect.

      dairy based soups don’t freeze well. You can freeze it, but it changes the texture as the dairy crystallizes during freezing and it will never be the same again. It will stay good in the fridge for at least a week (because bacon lasts longer than most meats I’d still eat it up to like a week and a half, it might separate a little, just stir it back together as you reheat) and I’d stick with that personally. Also make sure to add a little extra milk when you reheat to keep it from being too thick.

    Is it ok to use the shredded cheese in the ziplock bag from the store? I used it when I tried to make cheddar broccoli soup but it didn’t melt right and stayed all stringy and clumped up

      I recommend using freshly shredded cheese. They coat the store pre-shredded cheese to keep it from sticking, which also keeps it from melting smoothly. It also has a weaker flavor so you end up having to add more to get the right flavor.
