Rainbow Sprinkle Birthday Cake

One of the very best things about living here is being so close to so many family members. Obviously there are my mother and father in law upstairs along with a sister in law, but I also have an amazing Sister in law just 4 exits down the freeway. We love to spend as many Friday nights with each other as we can, with the kids playing and us adults enjoying each others company (she’s hilarious!)

Anyway we also get to spend time together for family birthday dinners. Last week was my nephews birthday. We got together for just dessert, and I offered to make a simple cake. He requested chocolate cake and vanilla frosting! Beyond that it didn’t matter. So I had a ton of sprinkles left from my Ice Cream Parlor birthday party and having seen this adorable cake with sprinkles at the great cake company I decided it was the perfect time to try it out!!!

Then as I was taking pictures I moved it to quickly and it FLIPPED OVER!!!! GAH!!!! Luckily the cake didn’t break, so I flipped it back, re-spread the frosting, intermixed with sprinkles now, and re-sprinkled it! It worked great (and of course tasted amazing- and that’s all that really matters, right?)

Here is how I sprinkled it: I tilted a FRESHLY frosted cake, poured a pile of sprinkles into my hand and put it against the bottom of the cake and then brought my hand up the cake, pressing in the sprinkles as I went. For the top I poured a pile on and softly spread it around, pouring more where I needed it.

Pretty simple, BOTH times I did it! And quick to, an easy last min cake decoration if you need one! AND I have to say but I kind of LOVED the extra texture of the sprinkles in the frosting! I might just do that under the fondant in my next cake for FUN!

      Thanks so much! I couldn’t believe how fast it came together, esp since I had to decorate it twice after dropping the cake, great for last min party cakes!

    This looks fab! I love this trick for covering my not-so-uber-spectacular frosting jobs (or those with ugly colors of frosting, like dulce de leche). Thanks for sharing this pretty cake. Love your blog design too! Clean and chic.

    Perfect! Easier than decorating a cake and my kids love sprinkles.nom gonna pin it right now! In fact my 6 yr old dd just saw that and said “I want it! I want it!” thanks for the idea.

    Wow, you make beautiful cakes! This one looks really tall, and I really like that look. I was wondering if you could tell me the size round that you used and the number of layers…I’d really like to try this one out!

    how far in advance can i make this cake — i have a party on sunday, would friday be too early for a fresh cake?? never did the cakes for my girls’ parties before, so i am a nervous baker!

      ummmmm I don’t like to make cakes more than a day before, but two days should be okay as long as you don’t refrigerate it. refrigeration dries cakes out really bad. so if you make it that far in advanced make sure you don’t use milk or butter in your frosting/filling so you can leave it out. also make sure the frosting is covering the cake completely to seal the cake part and keep it moist.
