Rainbow Sprinkle Birthday Cake

One of the very best things about living here is being so close to so many family members. Obviously there are my mother and father in law upstairs along with a sister in law, but I also have an amazing Sister in law just 4 exits down the freeway. We love to spend as many Friday nights with each other as we can, with the kids playing and us adults enjoying each others company (she’s hilarious!)

Anyway we also get to spend time together for family birthday dinners. Last week was my nephews birthday. We got together for just dessert, and I offered to make a simple cake. He requested chocolate cake and vanilla frosting! Beyond that it didn’t matter. So I had a ton of sprinkles left from my Ice Cream Parlor birthday party and having seen this adorable cake with sprinkles at the great cake company I decided it was the perfect time to try it out!!!

Then as I was taking pictures I moved it to quickly and it FLIPPED OVER!!!! GAH!!!! Luckily the cake didn’t break, so I flipped it back, re-spread the frosting, intermixed with sprinkles now, and re-sprinkled it! It worked great (and of course tasted amazing- and that’s all that really matters, right?)

Here is how I sprinkled it: I tilted a FRESHLY frosted cake, poured a pile of sprinkles into my hand and put it against the bottom of the cake and then brought my hand up the cake, pressing in the sprinkles as I went. For the top I poured a pile on and softly spread it around, pouring more where I needed it.

Pretty simple, BOTH times I did it! And quick to, an easy last min cake decoration if you need one! AND I have to say but I kind of LOVED the extra texture of the sprinkles in the frosting! I might just do that under the fondant in my next cake for FUN!

    This is so pretty! I have a TON of Valentine sprinkles leftover (sadly from LAST year, ha ha ha) and a little girl’s birthday coming up. I wanted to do your ombre cake in pink for her. Maybe I will use the sprinkles on the outside. Thanks!

      I won’t even TELL you how old some of my sprinkles are…. WAY older than one year though… I love the idea of the ombre and sprinkles! How fun!!!

      I agree!!! I’d love to do it in all valentines sprinkles too, or maybe all CHOCOLATE sprinkles… Mmmmm I think I have my future birthday cake planned out now…

      I had a cookie sheet underneath along with parchment paper so I could collect and reuse the sprinkles that fell easily. So really not much of a mess! My tilting turn table for cakes helped too, so it all fell the same way!

    Oh.My.Word. This is MY kind of cake! Whenever we go get icecream from a shop, I LOAD it down with sprinkles. I can’t get enough of them. Never thought to do this! My birthday is in June. I just may have to have a sprinkle birthday cake!!

      This is for SURE you kind of cake then!!! You might even want to mix the sprinkles into the frosting ON PURPOSE, even in the middle of the layers too!

      It was, but I’m a big believer that while a cake can (and should be) cute, pretty and fun the MOST important part is that it tastes good!

    That turned out so neat! My three year old is in love with this cake, she keeps asking me to go back to the ‘lots of sprinkles cake’.

    My daughter would go nuts over this cake. Before she would even try ice cream as a toddler, she would eat a little cup of sprinkles at the ice cream shop. It took her a few years before she finally tried ice cream. She now loves ice cream but she’s still a sprinkle lover too :).

    This looks so amazingly delicious! I love sprinkles on anything, donuts, ice cream, CAKES, and valentines chocolates. So much so that when my man ate my valentine chocolate with the sprinkles, he got a stern talking to about how it is my favorite!

      Agreed, I added the chocolate sprinkles to my mint buttercream frosting for my ice cream cone cake and loved it! VERY fun addition to frosting!

      you could easily do the rainbow layers inside as well! They seem to be the way to go these day’s for rainbow parties! How fun!
