Today’s tip is SUPER short and super easy – Keeping track of your extra separated eggs! I’ll make my Marshmallow frosting and have a bunch of extra egg yolks, or my Chocolate Ganache ice cream and have egg whites left over… When I’m baking wedding cakes sometimes I’ll have as many as 50 extra egg whites, and there are only so many frittata’s or omelets I can make!
So what do you do with the extras? I might use 8 out of the 50 (or 1 out of three) but not necessarily all at once! So this is how I keep track of how many I have, and when I use some, how many I have left. It’s not exact (esp the egg whites, vs yolks) but it does help a ton!
