Sweet 16 Birthday cake!

I got asked to make one of my Topsy Turvy Cakes for a joint sweet 16th birthday party. They wanted it bright and colorful and busy. That I can do! It was such a fun cake to make, although it was not without it’s issues. I’m still getting used to my new oven. It’s great, but it’s gas, and I’m used to electric. I’ve found with the elevation here in on the mountain that my cakes have had trouble baking.

My chocolate cake is the only one that hasn’t had major issues. So I decided to try a water bath. It worked GREAT for the top two layers. It took an extra hour to bake, but they turned out perfect! Moist through out, no burning, just AMAZING! I got to try out a new recipe I’ve been working in, Pina Colada. It still needs a bit more of the pineapple flavor, but it’s one tasty cake.

The issues came with my chocolate cake. It’s always been my best cake, really moist and oh so delicious. This time however… It took so long to cook it got burnt on the sides. SO I tried the water bath. Then it took an extra 2 hours and while the center finally cooked the outside was almost completely raw~! I baked 4 layers and while I needed 2 I ended up with only 1 1/2 working layers. So the bottom layer is much shorter then I meant to have, but I simply ran out of time. When a cake takes 3 1/2 hours to bake and is still raw on the outside? Something needs to change. So I know what I’ll be working on this week. Re-perfecting my chocolate cake!

      Thank you! I didn’t change my address, but I did change from blogspot to a self hosted wordpress a few months back! Maybe that would do it? Oh, and WHEN are we going to meet in person! I just LOVE everything you do and I can’t believe we’ve gone all this time in the same state. We’ve got to get together.

      I know, right? My folks threw me a great sweet 16 surprise birthday party, but back then cakes weren’t fun like they are now! I’d even like a do over on my wedding cake!
