Sunflower Truffles

When I was watching “Tinker Bell and the Neverbeast” movie and trying to come up with fun foods for the party I wasn’t planning on doing anything with the sunflowers, but there is something about flowers that just makes everything so happy and I couldn’t help myself!

These chocolate cups are super easy to make and look adorable (taste great too!)

Equipment

  • mini cupcake liners
  • piping bag
  • mini cookie scoop

Ingredients

  • 18 oz chocolate
  • 6 oz heavy whipping cream
  • 12 oz yellow candy melts
  • 1 C chocolate jimmies
US Customary - Metric

Instructions

  • bring the cream to a low simmer and pour over the chocolate and let sit for 5 mins
  • stir until smooth and refrigerate until firm, about 3 hours
  • Flatten the mini cupcake liners slightly and separate
  • melt the yellow chocolate and fill a piping bag
  • thinly pipe the bottom of the liners, filling in any gaps, then, while turning, pip up the sides to create petals
  • let cool completely until set and peel off the liners
  • scoop out the truffles with the mini scoop and roll them in the sprinkles (if they don't stick try rolling the ganache balls in your hands a bit to warm them up and "melt" the outside slightly)
  • place the truffles into the chocolate flower cups

The little girls didn’t really get these, but the adults all loved them!  A nice rich treat (I ate quite a few myself!).  These could work with other colors to create other flowers as well!

    Amazing!
    But you should try this using “Brigadeiro”. A typical Brazilian recipe. It’s so delicious!!!
    And it looks exactly like this, but using “Brigadeiros” the chocolate sprinkles stick very easily!

      Do you have a recipe for the ganache aka truffles? Also, when I melt the yellow chocolate and put it in the piping, doesn’t the yellow chocolate harden quickly? I need to make 130 of them for a bridal shower. BTW, they look so pretty. I haven’t made them yet.

      Is It Okay to use a fondant instead for the petals? Does it complement with the taste of the truffle?

      IMO fondant doesn’t complement any thing flavor wise, but it does look pretty, and would totally work

    Sorry, Ashley, I just noticed you do have the recipe for the ganache. Thank you and I can’t wait to make them. One more question, how many days in advance can I make them? The bridal shower is early on a Saturday, so I don’t want to be making / putting them together the morning of. Can they be put together several days ahead and placed in an airtight container? Again, thank you.

      as long as you have room to keep them cool you can make them days ahead of time, you can make the chocolate cups and keep them in one place and keep the truffle balls in another and then put them together last min, it might be easier

      depends on the size of the ganache batch and the size you scoop you use too. I’ve never just made a batch and made truffles, I make so much ganache i always have some around and I always make a huge batch and just scoope the amt I want and use the rest for frosting! GAH so sorry! – but a 1 lbs batch is like 3 cups and with a mini scoop of 1 1/2 tsp it could make a hundred or so.
