Usually I bake my fish pretty simply, butter, lemon and some spices.  But I usually bake Salmon, and salmon has an amazing flavor on it’s own.  BUT this is trout, and while trout is a great fish I thought it could use a little… pizazz?  SO I decided to try something new. You’ll love this Stuffed Trout recipe!

First thing I did?  Rub butter on the foil so the fish skin won’t stick…  I also sprinkled the butter with my normal fish rub, lemon pepper, salt, etc… whatever you like with fish.  Some spice brands have premixed fish spices and rubs that are easy and great!

Lay your butterfly cut fish on the butter, skin down.  You can add your favorite go to oil if you want here, I like using butter with fish, but I also like olive oil…

Then I added some pre-made stuffing.  I’ve never been a fan of homemade stuffing.  It’s one of the very VERY few things I don’t make from scratch!  I am in LOVE with stovetop stuffing.  One of two box mixes I own in my pantry (Stovetop and Lehi Roller Mills Chocolate Brownies!)

Then fold over the other half of the butterfly trout.

Now we’re going to wrap it up in the foil!  Fold it over, then fold or roll in the open ends to create seams…  Yes I should’ve taken a picture of that.  But any of you who regularly read my blog KNOW I always seem to be missing ONE picture of every project!  Hopefully you guys GET it without the picture.

Cook for 10 minutes plus an extra 10 minutes for each inch of thickness at 350. So since mine were so little it only took 20 mins!

Open it up!  I have to say I was surprised by how GREAT it turned out.  We ended up with extra (the kids prefered the normal butter and lemon trout) and so we shared upstairs and even my Mother in Law and Sister in law (not normally fish people) loved it!  And since the kids are already asking to go back to the trout farm I’m glad to have a new recipe…
