Watercolored Buttercream Edible Sugar Crystal “Glitter” Filled Cake

This cake was seriously so much fun to design and make! I knew we wanted the outside elegant but fairly simple to highlight the fun surprise when you cut into it… edible glitter! Well actually large sugar crystals, but they LOOK like edible glitter, all shiny and bright!

I decided on an extra tall cake, the perfect centerpiece.  Rather that stick with just white buttercream I added splashes of pink buttercream (the same shade I used for the center frosting) then scraped away for a subtle watercolor effect.  It’s very easy and VERY pretty (I’ll add a video soon).

SPEAKING of video… Here is the latest, a fun tutorial on how to fill a cake! It’s simple and stunning and SOOOOO many possibilities!!!  I filled this one with white and gold sugar crystals to bring out the gold we were using through out the party, but you could use so MANY different fills! Non Perils, sprinkles, candy confetti and more!

What makes the biggest difference in my opinion is trimming the top and bottom of EACH layer so that when you pull out a slice all you get is that white white white.  I’m thinking of even trimming the outside edest next time to get rid of that golden edge around the outside!

And the top, SO pretty! large shards of swirled white and pink chocolate speckled with silver, gold and white candy balls.  Interspersed with white meringue kisses that are hand painted with edible gold.  All nesting in some hand pulled sugar (a video tutorial on that soon)

I mean SERIOUSLY how pretty did this turn out! I’m still just giddy in love with this one!  This party cake was an 8 inch cake, so the center hold is bigger and holds more sugar than the smaller 6 inch version I did for the video, it just goes to show that you can make any size, just maybe change the center hole size as you do.

Seriously a new favorite! I’d love some suggestions on other fillings you’d like to see!
