I love carving and creating structured cakes, but I also love making gorgeous wedding cakes. So when my sweet Cousin got engaged I couldn’t WAIT to sit down with her and designing the cake. We went through more designs on this cake than any other, BUT once you come up with the perfect design you just KNOW it!
It’s a HUGE cake, super heavy, but it looked just lovely! I love the different height’s on the layers and everyone loved all the different flavors too! We had coconut with coconut filling, strawberry with lemon cream cheese filling, white with white chocolate and chocolate with chocolate!
We originally talked about doing ruffled vertical rows around the bottom tier to reflect the skirt of the dress, but then the bride fell in love with these soft, ruffled, petals! I started with the bottom row and overlapped each petal all the way around and up and over the top and corners
The silver leaf tier went on just like this gold leaf tutorial I did. The edible silver leaf is a bit cheaper, which is nice, but just as difficult to work with. I LOVE the great SHINE you get with the leaf though, nothing is quite like it!
The tall tier is supposed to represent the lace on the cake, but she didn’t want a fully laced cake, so we just did the bottom, with a little detail on the top. I used these martha stewart adhesive stencils for this portion! I did every other swirl with royal icing, then once that dried filled in in-between.
For the top tier I added fondant pleats and then a line of buttons matching the gorgeous back of the dress. It was super easy to make, roll out thin fondant, cut in quick stripes of different widths and wrap them around.
All the pictures were taken by the incredible Chelsea Peterson Photography, It’s so fun having so much family live so close! Here is the back of the dress that we used as our inspiration as we worked on the cake design! You can see all the elements and how it came together. I love making cakes for people I love and this was no exception!
This cake was actually a cursed cake, everything that could go wrong did, BUT then the night before everything just started to clicked into place and it all came together so well! The bride loved it and I’m happy with how it turned out!
This couple is hilarious! The groom wore his DAD’S wedding tux, thus the blue ribbon around the bottom of the cake, to match this retro baby blue tux (complete with ruffled shirt, seriously). I love watching the couples try to cut the cake. Everyone thinks they know to cut a cake until that MOMENT when all eyes are on you and you realize you have NO idea how to cut a wedding cake!
Luckily they only had to cut one small piece… Then I cut and served the rest (like my gloves?). What was your wedding cake flavor?

I love that middle layer! You did a great job incorporating the look of the dress into the cake!
Ashlee
Thanks! It’s fun to play with the different heights of the cake! And I love modeling the cake after the dress, kind of highlights the bride even more that way!

Awww thank you so much! I wish I had me at my wedding 13 years ago… My cake was my biggest disappointment! Also cakes are so much more FUN now than they work back then! they were so standard and boring when we got married

You are so incredibly talented! I need to hire you for a cake! I agree with Jesseca – I love how you incorporated the dress into the cake!
Ashlee
Thanks so much! and I’d of COURSE love to work with you on a cake!

Wow, this is incredible!!! This is such a gorgeous cake! Love that you customized it to coordinate with her dress. I so totally want a piece right now! XO
Ashlee
thanks! I love using the brides dress as a jumping off point! It makes it a great centerpiece and compliments the bride wonderfully!

I can not remember my flavors, one was a chocolate….. and then we have a cheesecake as a grooms cake with strawberries that looked like tuxedos! That’s all I remember!
Ashlee
All I remember is your cake being crocked and worrying it was going to fall over! my own cake all I remember is the TERRIBLE fondant work, but thankfully our florist covered it all up and it ended up looking nice!

Ashlee,
First of all your cake looks amazing! The detail is awesome. Secondly, you obviously love what you do! As the saying goes if you love what you do, you’ll never work a day in your life! And if “everything went wrong” as you stated in your post, you sure couldn’t tell!
Ashlee
awww thanks! My husbands “rule” for me working is “if it isn’t fun stop doing it” (since I’m a stay at home mom first and only work for my own enjoyment, he doesn’t want me to start feeling like I HAVE to work and hating it). And GAH it was like a cursed cake, but I worked it out. It did take longer than I expected it too!

“but I also love making gorgeous wedding cakes…” You got that right, this is GORGEOUS!!! You caught the lacy/dressy look perfectly! Im not kidding, this is my all time favorite cake that you have made so far.
Your cousin and her husband look soooo happy! Oh and will you pass it on to your sister, Chelsea, her pics look great!
Ashlee
Thank you so much! This one turned out great, I was really happy with it. but just WAIT until you see the one I delivered yesterday (or if you follow me on instagram or FB you probably have already seen it)! It’s my NEW favorite. Usually my most recent is my favorite though, which is how it should be, right?

I had a vanilla cake with raspberry filling. Funny story, I put the leftovers in my mom’s freezer to save for our anniversary. When the time came, it was gone! My mom totally denied eating it, then later admitted it. Ha! She couldn’t resist eating our delicious cake.
I absolutely love this one you made, love the monochromatic design. Amazing!
Ashlee
That’s GREAT!!! it means you had a good tasting cake! I love decorated cakes of course, but my big pet peeve is when a pretty cake tastes bad, so disappointing. I’d rather have an ugly cake that tastes AMAZING, but one that tastes great AND looks great? BEST THING EVER!
