Instructions
Ganache
In a food processor grind the M&M's® up (or smash with something, but it won't be as fine) and pour into a bowl
in a small saucepan heat the cream until just before it start so bubble
Pour the cream over the chocolate and stir until smooth
Let cool and it will thicken up
Cupcakes
Preheat oven to 350
Mix everything together and beat for 2 mins on medium
Pour into 24 cupcake liners and bake for 19-23 mins
Let cool
Take a medium sized frosting tip, a cupcake corer or a small spoon and scoop out the center of the cooled cupcake.
Pipe or scoop the ganache into the center of the cupcake, overfilling is okay
Frosting
Put eggs whites, sugar and corn syrup in a bowl over a saucepan of boiling water.
Beat with a hand mixer until soft peaks form- about 4 mins.
Take off heat and beat with electric mixer with whisk attachment on Med high till stiff peaks form- about 30 sec.
Pipe over the top of each cupcake
