Spinach Salad

baby spinach

hard boiled eggs
sliced

bacon bits

C
slivered almonds
Grated mozzarella cheese
Dressing

red onion
about a ¼ of an onion

white vinegar
I've also used rice vinegar and it works well

olive oil
you can use vegetable oil if you'd rather

Instructions
Salad
Start with a layer of Spinach
Then layer eggs, bacon bits, almonds and cheese, repeat over and over again until you reach the top
Dressing
puree all ingredients, except the poppy seeds, in
food processoror blender
until it's well blended and you don't see any flecks of red onion.
Then add the poppy seeds, give it a short mix
Serve over salad, refrigerate any extra and stir before using again
