Instructions
Pâte Sablée Crust
In a stand mixer, or with a hand mixer, cream butter, sugar, yolk, and salt until smooth.
Add flour and slowly mix until dough is uniform.
Turn dough out and using your hands, form into a disc. Wrap and chill dough 15-30 mins
Roll or pat the pastry evenly in the bottom and up the sides of an 8-9 inch tart pan, cover with plastic wrap and chill 30 mins
preheat oven to 400
lightly prick the bottom of the pastry crust and bake for 5 mins
reduce heat to 350 and continue to bake for 15 mins
Let cool.
Apple Pie Filling
peel, core and slice apples
In a large saucepan melt butter, cinnamon, nutmeg and sugar over medium heat
stir in apples, 3 Tbsp water and lemon juice
cover and cook stirring occasionally 4-6 min until slightly soft
in a small bowl combine cornstarch and water, add to pan stirring, cook apples until soft and filling is thickened, let bubble 1 min
Pour into tart crust
Crumble
Preheat oven to 375
mix everything and spread into a cookie sheet
bake for 20 mins stirring every 5
let cool then spread on top of tart
