cook the red onion, after a few mins add the spinach, and when it starts to shrink add the garlic and cook until translucent
Heat up your pan or skillet to medium
butter one side of each slice of bread
with the butter side out - layer the mozzerella, chicken, spinach/onion mixture, olives, tomatoes and then the goat and feta cheeses, top with another slice of bread (butter side out)
cook each side until golden brown, slice and serve!
