Garlic, Tomato and Chicken Sausage Zucchini noodles

This one pot meal is easy to make and always a huge hit, slightly spicy with the Italian sausage and filled with veggies like garlic, tomatoes, onions, peppers and of course zucchini it's a dish everyone loves.

  • 1 onion
  • 1 red pepper
  • olive oil
  • 4 italian chicken sausages
  • 1 pint cherry tomatoes
  • 4 Tbsp garlic
  • 1/2 tsp oregano
  • 1 tsp red pepper flakes
  • salt and pepper to taste
  • 2 1/2 C chicken broth
  • 2 large zucchinis
  • parmesan optional


  • slice or spiralize the onion and red pepper
  • heat a few tablespoons of olive oil in a pan and add the onion and pepper
  • saute until the onion is translucent.
  • slice the italian sausages and tomatoes (in half)-  add to the pan
  • add the garlic and stir - cooking until the tomatoes start to release juice
  • add spices and broth
  • bring to a boil and let the liquid boil down by half
  • spiralize the zucchinis and add to the pan, stir and serve
  • add parmesan cheese if you'd like and enjoy!
