Coconut Macaroons

The first time my mom came home from Europe she brought a new favorite treat, a Bounty Bar.  She loved it because it was like Mounds bars, but in milk chocolate instead of dark (I prefer the dark chocolate).  But since she can’t rush off to Europe every time she craves one I set out to make a good substitute!

These coconut macaroons are great by themselves, better in chocolate and even better dipped completely in chocolate (although not quite as pretty).  Use milk or dark chocolate and if you love Almond Joy’s add an almond to the top before dipping!!!

The key is to use SHREDDED coconut, not the string sweetened coconut you get at the grocery store.  I once used the sweetened coconut and while it tasted great with the extra sweetness it didn’t stay together and didn’t hold it’s shape at ALL.  Now you CAN use the sweetened coconut IF you take the time to run it through a food processor to create your own shredded coconut!

Coconut Macaroons

Ingredients

  • 1 C sugar
  • 4 Lrg Egg Whites
  • 6 Tbsp Flour
  • 3 C shredded coconut
  • Chocolate for dipping

Directions

  • Vigorously whisk the sugar, egg whites and flour.
  • Stir in coconut.
  • Scoop tablespoon mounds onto cookie sheets with parchment paper (I use a small scoop).
  • Cook at 350 for 12 mins. Cool
  • Dip in chocolate

Easy peasy!  I like to use small scoops to create these cute mounds but you can flatten them a bit if you want or of course use a larger (or smaller) scoop as well.  Personally I like small bitesized treats, better chocolate ratio too!

Brown Butter Madeleines

You guys know I like pretty food, right? So I just HAD to try Madeleines the first time I saw them! More cake like than cookie like, but small and bitesized? LOVE!  I have tried many recipes over the years and some are terrific and some… fall flat.  I really need to make and share more of my favorite recipes but for today we’ll start with these Brown Butter Madeleines.

Jasmine’s Golden Dome Oreo Truffle Pops

Jasmine was one of the hardest of the Princesses to decide on a food item for. She eats an apple in the market place with Alladin, but I’m doing apples with Snow White so that doesn’t work. So rather than go with food from the movie what about part of the movie that is a stand out, the carpet? I’m already doing cookies… So while it’s a little obscure I decided to go with a piece of her castle, the golden dome’s, such a unique shape for her castle! And I LOVE how well the shape came together!

My mom’s favorite candy is Almond Roca. And this is a GREAT copycat recipe.  It’s a is a family favorite that we make EVERY year. Warning, Candy making is super tricky. Candy making is affected a lot by the barometer range. SO if it’s going to rain DON’T bother with a batch!
